谷肥計劃之碧加果布朗尼 Pecan brownies

喵喵知道我囝囡好中意食brownies,我也時常整不同配料的布朗尼給他們吃,因此,上次回港喵喵送給我一包碧加果, 叫我用來整布朗尼,真是有心。

之後還常問我有沒有用到,真不好意思,太忙了,新年太多其他野要做,直到小詠說想整brownies問食鐠,我才o的起心肝整。。。
Cheesy Mui Mui gave me a packet of pecan halves and specifically told me to use it to make brownies. I have been back home for over a month, and Mui has asked me a number of times whether I have used it, heeee.... you know what they say about lazy people has thousands of excuses NOT to do something. Oh well, I won't start listing...
Last week, Wing Wing was asking for recipe for making brownies and I sent her this NO FAIL ultimate brownie recipe that my sister Alice gave me. Why no fail? because it sure works, haaaaa.... THAT reminds me that I am supposed to make one too using the pecans. Here I made two flavors: round one is chocolate chips, and the square one is crushed almond; BOTH with pecans on top.....

Ultimate Chocolate Brownie
Melt:
4 oz - unsweetened chocolate, chopped
½ cup (125 g) - unsalted butter, cubed
2 Tbsp - cocoa powder
1 Tbs - instant coffee granules

Stir in:
1½ cups - sugar
1 tsp - vanilla extract
¼ tsp - salt
3 eggs

Fold in:
1 cup - flour
¾ cup - walnuts, toasted, chopped optional

Preheated oven to 350o and coat an 8” square baking pan with nonstick spray.
Melt chocolate, butter, cocoa powder and coffee in a bowl in a microwave on full power, stirring every 30 seconds (or in a heavy saucepan over low heat). Remove when chocolate is nearly melted and stir until totally smooth.
Stir in sugar, vanilla, and salt. Add eggs one at a time, blending well after each addition.
Fold in flour and nuts. Spread batter in prepared pan and bake 30-40 minutes. Cool completely on a rack before cutting.

    Is it possible to share your recipe? It looks so fudgy and moist and this is exactly what I want. I used to follow the recipe of SinaTV but it is often too dry and taste like cake.

    I will try to get the recipe out ASAP... I think the most important is the temperature and length of baking. Must take it out before the whole brownie is cooked, because the temp in the brownie will continue the baking after you take it out. Must check it every 5 min after half an hour.

    It's me again. Thank you so much for the recipe. Sorry that I have some more questions.
    Baking for 30-40 minutes sounds quite long. Will the 4 sides get dry? Did you cover it with alumnium foil?
    You said I should take it out before the whole brownie is cooked but how do I know the whole is cooked? Can I just take it out after 30 minutes (the minumum time)?

    No problem, u r to line the whole pan with parchment paper first. The degree is 180 in celcius; so depending on your oven's heat, mine is normally done only around 40 min (also depends on the thickness of the brownie). BUT, you can start to check from 25 min onward. After you do it the first time, it will be easier to adjust. When I say take out before cooked meaning when u put a toothpick in the middle, when pull out, still a bit sticky but NOT runny. Hope you understand; do ask again if not. X)
