Happy birthday to William

Finally, today is 威爺 William's birthday! Though I don't know William personally, sure heard lots about him from his darling wife, Janice! From what I gather, he has to be the nicest and one n only most terrific hubby there is on this earth... heeee.... If you want to know why I say so, go to the link above to read for yourself. FYI, the birthday cake's color is modelled after Prince Charming's fair complexion, haaaa.......
Will, wish you all the best in your new job and God bless you always!

BBQ pork puff pastry

BBQ pork puff pastry, even the BBQ Pork is homemade! Due to feedback from AC, added a tsp of chicken stock powder in the pastry dough so it added the tint of saltiness that was missing last time. Even Daddy Dearest says it is delicious!

Happy Birthday to Debbie

SO, this mommy got the order from darling to make a baked cheesecake for her good friend... I am supposed to thank her for telling me one day in advance too... hmmmmm.... Only consolation is that all her classmates loved the cake and asking for encore... heeee....

Your wish is my command, darlings

I am going to mention my good friend "Blue Rain" again, because I quoted her in my title of this post; "obliging" is the word. Well, it is true, to please my kids tonight, I cooked another non Korean meal of steak dinner for them. But just to show my loyalty to my food adventure, I made myself a mushroom kimchi tofu pot for MYSELF....

BON APPETIT!

Italian Sausage pennes

After three consecutive Korean dinners (all different dishes mind you), my family is crying foul; loud and clear... In order to keep my guinea pigs happy for future use, I immediately cooked an Italian pasta dish for them tonight. Sausage is my son's favorite, so, this is a sure win and easy to make dish. They are happy again!
Guess will have to say adios to Korean food for awhile, but stay tuned, I am not done yet.... heeeee....
Aiyooo.... Judy wants the recipe and of course I must write it right away, so she can cook it for Charles and darling Faith...
Ingredients:
Sausages or minced beef .5 lb (own preference)
Bell Peppers 1 each of 3 colors, cubed
Onion 1, diced
tomato 2, diced
tomato paste 1 small tin
Italian Seasoning 3 tbsp ( add more if u prefer)
penne or pasta 1 pkt (12 oz or own pref)
Method:
1. Brown sausages or minced meat, drain off fat n put aside
2. Fry some garlic, put in onion and fry till half transparent
3. Add in tomato , tomato paste and Italian seasoning, simmer for 5 minutes till fragrant
4. Add in pasta and sausages, and cover with water or chicken stock
5. Boil and simmer for 15 minutes till pasta is soft
6. When the pasta is ALMOST done, add in all the bell peppers
7. Check for doneness, if to your preferred texture, turn off heat and leave lid open and serve
** Note that this is my own version, and I normally put in whatever I have in my fridge, you can use leftover chicken, seafood etc.
**If you add chicken stock, it will be more tasty.
**Add your own seasoning because you will probably need to add some black pepper and salt. All my recipes are lo fat and lo salt, so you have to adjust.
** You may add 2 bay leaves inside to cook if you like their smell; it goes well with tomato based dishes.

Enjoy your dinner!

The title in Korean says "enjoy your dinner", so I hope you enjoy this Korean dinner too. I promised Alice that I will show her how to cook her favorite Korean "Horse Noodle", hailed from her favorite Tacoma Korean Restaurant. I remember we have to drive one long hour every time to go there for this noodle, often wonder whether it is worth it. The only one who thought so is Alice, haaa.... Anyway, I used Korean Black Bean paste, fried fragrant with garlic, onion, ginger, carrot, mushroom slices, prawns and scallops, topped over la mien... yummy. It does look very black, but IT IS black, haaaa..... I think next time I go to the Tacoma restaurant, I will ask the Korean lady why is this dish called "horse noodle", there is no horse meat inside... haaaaa.

This orange colour thing is Korean "Nian Gao". When you go to Seoul , you often see roadside stalls selling this dish; and many Koreans will slurp them up in gusto. After a few curious glances, I also tried it and see what is so great about it. Hmmm, I am STILL wondering.. haaaa. Personally, it tasted like shanghai nian gao cooked in chilli sauce... not my cup of tea. But since I am making Korean food tonight, might as well cook this for Alice to see, maybe she will like it :)!

Spicy Seafood Tofu Soup

After I posted the Korean Tofu Soup, my sister Alice in LA saw it during her dinner time there. The first comment she made was, "not red nor spicy enough"... true, but hubby and kids can't take that spicy and that one was quite hot already. Hmmmm.... the more I recall LA's tofu soup, the less similiar mine is though the taste is the same. Can't take that sitting down, solution?
Seafood kimchi tofu soup for MY dinner tonight, heee.... Red n Spicy enough, Alice?

Korean Tofu Pot

Recalling LA's Tofu House, what a mouth watering experience... Everytime I go to LA, Alice will sure bring us there for at least one dinner. I just LUV the tofu soup and BBQ beef shortribs, yummm.... Couple of days ago, Yoyo recommended me one blog and it has tons of delicious Korean cuisine. It sure reminded me to make my own version of tofu soup a la LA... After the taste test by all the picky eaters at home: DELICIOUS... Yeah.... if I may say so myself, it was pretty good... heeee!

Blue Rain's Portuguese Influence

Blue Rain went for a cooking class in Macau and learned lots of authentic Portuguese dishes. She took great pain in taking down notes for us, so nice of her. http://www.wretch.cc/blog/pigheadyoyo After looking at all the delicious food, it inspired me to make my own favorite Macanese food: Portuguese Baked Chicken Rice. I am very sure that it is NOT authentic, the only reason why I like it so much is because I used to eat it very often when I lived in Macau as a kid. Talk about childhood favorites, this is one of them... one of MANY of them, haaa.... down the memory lane again!

HAPPY BIRTHDAY TO YOU, Janice! Today is my webfriend, Janice's birthday! She requested that I courier over a birthday cake for her and hubby William whose birthday is next Thursday... I was just ABOUT to comply, then I read about her blood sugar level is high, no sweet stuff is allowed. SO, in order not to tempt her, I took a picture of the cake and send it over instead... and the most difficult part of eating it, I will ask my kids to do it on her behalf, haaaa, HAAAAA.. You owe them one, Janice!
God bless you on your birthday, and be the most beautiful and happy mama!

Yesterday's weather was as hot as can be, the only way is to hide in aircon room. But I have planned to have a BBQ dinner already, how? Of course I will have my BBQ regardless, hey, it has been ages since I had one so the weather is NOT going to deter me....

As my hubby always says, when it comes to FOOD, I can climb mountain or cross the sea... Haaaa...

With Thanksgiving

Hallelujah, praise God; Bryan received the approval for his military deferment from the Government for one year. This allows him to finish the foundation course in U of New South Wales before he goes into National Service. Really it is a miracle...Bryan is the first ever granted deferment for this course, hallelujah..
Thank God for His Provision and we thank all the brothers and sisters in Christ who have been praying for Bryan since his O level last year. Really have learned so much lessons on faith and trust through the whole episode. We know that God gives us the best, even when God's best is not what we humanly wish for; it really is a tough lesson to swallow. But, "All things worketh well for the ones who love Him, according to His purposes".... and in Luke 1:37, "In God, nothing is impossible." Thank You Father for listening to our prayers and pray that You will continue to guide Bryan's footsteps... in Christ's name, Amen.
Congratulations, Bryan ; and with this Chocolate Ice Cream cake, Wish you all the BEST in all that you do, Yeah....

Thanks to Babe Dearest

Nowadays, it is not easy to be a mother; especially to my babe dearest! The last assignment darling has as an outgoing student councillor is to organize her JC's Music Fest. Since it is her pet project, she wants everything to be just nice; which includes a reception before the event. Where does this mommy come in? Only to prepare a savory item for 100 people and something that doesn't need refrigeration and tastes nice and loves by EVERYBODY , that is all. Aiiiiyooooo, talk about tall order.
After much deliberation, darling ALLOWS me to make quesadilla with salsa. Since they don't have refrigerator, I used summer sausages, onion, tomato and cheese as fillings. As a surprise, I made almond cookies for them too (special thanks to 大少奶 for her recipe, http://hk.myblog.yahoo.com/Delicatessen-ivanbee). Hope they like it.
Bon Appetit !

Braised Pork with Preserved Vegetable

This braised pork dish has always been one of hubby's favorite. But because it takes so much time and effort to cook it that I have never tried making it myself. This trip to HK, we ate one of the best version of it at a Teochew restaurant that my cousin brought us to. Inspired by that, I told myself that I must try it myself after I return.
Made two portions of it and it sure took one whole day of work because of the boiling, deep frying and then steaming process. But by the look on my hubby's face when he tried it, guess it was worth all the effort!

Happy Birthday Sherry! God bless you and your music ministry! Be Happy always!

Quarter Century friendships

It has been 4 years since we last met John and Karen in Singapore, but of course when my hubby and daughter went back to Seattle for Thanksgiving 3 years ago, they have visited them there. It is always a pleasure to see Karen and John with their two daughters; first time to see lil bubbly Evat and so happy to see Elisa turning into a pretty young lady.
Turn the clock a bit backward, Karen and her family were probably the first friends my husband had in Seattle when he went to study there. They graciously put him up in their home before he settled down at the U. They brought him to the church I attended and that was where we first met, haaa... Besides that, John was our college fellowship's president during our years there, and lucky fella married pretty Karen and migrated there. Would you believe that John and my hubby were classmates in Junior College, served in same platoon in the army, then went to same U for Masters? This can be made into a soap opera if you ask me, heeeee....
LF and KS came over for dinner and we had a great time catching up with all the happenings among our common church friends in US. It seems so incredible it was 25 years ago that we were together studying; and now our kids are already THAT OLD....time flies but our age stands still, Haaaaa.......

Baked Curry Puff a la TaTa Mama

I thank God n treasure all the friendships I have built up through the unexpected world of blogging. Lots of people might think it is fate, but I think it is God's blessings!

I learned this curry puff from Rita's mom from Taiwan; it is a baked version and much healthier. Hope I passed her test..

HAPPY EASTER

Jesus has risen from the dead! It is written in the bible and archaeologists didn't dispute this fact. To me, my sins died with Christ and because of His resurrection, I have a new life in Him too. Thank You God for loving us, that You sent your Son to die on the cross for our sins, buried in the tomb for three days and then He was risen... So we can have a redeemed life, sins washed away by Jesus' blood.

Pray that I can follow Jesus' command in Mark 16:15,16 "And he said unto them, Go ye into all the world, and preach the gospel to every creature. He that believeth and is baptized shall be saved; but he that believeth not shall be damned." Amen.

MARK
16:1 And when the sabbath was past, Mary Magdalene, and Mary the mother of James, and Salome, had bought sweet spices, that they might come and anoint him.
16:2 And very early in the morning the first day of the week, they came unto the sepulchre at the rising of the sun.
16:3 And they said among themselves, Who shall roll us away the stone from the door of the sepulchre?
16:4 And when they looked, they saw that the stone was rolled away: for it was very great.
16:5 And entering into the sepulchre, they saw a young man sitting on the right side, clothed in a long white garment; and they were affrighted.
16:6 And he saith unto them, Be not affrighted: Ye seek Jesus of Nazareth, which was crucified: he is risen; he is not here: behold the place where they laid him.
16:7 But go your way, tell his disciples and Peter that he goeth before you into Galilee: there shall ye see him, as he said unto you.
16:8 And they went out quickly, and fled from the sepulchre; for they trembled and were amazed: neither said they any thing to any man; for they were afraid.
16:9 Now when Jesus was risen early the first day of the week, he appeared first to Mary Magdalene, out of whom he had cast seven devils.
16:10 And she went and told them that had been with him, as they mourned and wept.
16:11 And they, when they had heard that he was alive, and had been seen of her, believed not.
16:12 After that he appeared in another form unto two of them, as they walked, and went into the country.
16:13 And they went and told it unto the residue: neither believed they them.
16:14 Afterward he appeared unto the eleven as they sat at meat, and upbraided them with their unbelief and hardness of heart, because they believed not them which had seen him after he was risen.
16:15 And he said unto them, Go ye into all the world, and preach the gospel to every creature.
16:16 He that believeth and is baptized shall be saved; but he that believeth not shall be damned.
16:17 And these signs shall follow them that believe; In my name shall they cast out devils; they shall speak with new tongues;
16:18 They shall take up serpents; and if they drink any deadly thing, it shall not hurt them; they shall lay hands on the sick, and they shall recover.
16:19 So then after the Lord had spoken unto them, he was received up into heaven, and sat on the right hand of God.
16:20 And they went forth, and preached every where, the Lord working with them, and confirming the word with signs following. Amen.
