Mommy Dearest 廚房 -- 鳳梨rolls

170 degrees for 20 min till golden color

 

一到農曆新年就要做好多當賀禮,現在連一回香港都要做,今年只做左少少,應下節同送禮 !
 

    
 
Pineapple rolls @ Mommy Dearest

250g all purpose flour
150g butter
30g icing sugar
2 tbsp milk powder
1 .5 egg yolk
dash vanilla essence
dash salt (optional)

Method:

1. set butter to room temperature, add in icing sugar and egg yolk, mix till fluffy.
2. add in the rest of ingredients till become a dough
3. roll pineapple jam into desired size ball first (save lots of time if you can do it a day before)
4. put dough into the mold, squeeze out in strips, put in jam, roll and cut off (to test the dough is ok or not, it should be easily pressed out of the mold, if it is difficult that means you need more butter or oil to soften the dough)
5. put on egg wash (beaten egg yolk) before baking for 20 min @ 170
degrees (check your own oven temperature, should be light brown when done)
6 cool for at least 4 hours before packing

**winter time ll need more oil because butter solidified in cold. Remember to adjust till it can be pushed out easily from the tube.

Pineapple filling

刨黄梨,不要太幼,滴汁,用LC炒最好,加一根桂皮至夠香就拿出,炒到差不外干才放白糖( can see some white when turning the pineapple ) , 多少自己试,要看黄梨甜不甜和自己口味。要炒幾小时。看多少的。

    1. No problem A, remember you need to put more oil in to adjust the consistency of the dough when you make it in winter time (butter solidifies), it wont affect the taste at all.

    1. hehehe, you can make the pineapple filling ahead whenever you are free and keep in fridge. Then when harder, make it into shape in another day. THEN, do the dough and bake when you feel like it. Big project indeed if you make a LOT.... Note: one pineapple only yields little bit, so I normally fry at least 8 pineapples at one go.

      How is work going? I am going to Malaysia for short holiday tmr, will be eating TONS, kekeke.
      Yeah the pineapple rolls really take a lot of time, but my friends and family still want to eat them, so I will just make some for them. You try it out, it is not as hard as it is, just tedious work. Just separate the process into 3 weekends, then it will be all right. 1. cook pineapple fillings, 2. weigh and shape the fillings into balls 3. make the dough and bake.... THERE.... kekekkee.... Man, I feel tired already. hahaha, just kidding.
