Mommy Dearest 厨房 - 西班牙海鲜大獲飯 Paella Mamagria mixta

Paella Mixta

two types: Valencia seafood only, and mixed chicken, chorizo and seafood paella
use olive oil and brown the meat
the Valencia just saute the onion n garlic with olive oil
add long beans and grate in two tomatoes


add in cumin, paprika liberally, I added cayenne for spiciness

two schools, add in rice now , or add stock first



add in some frozen peas, then make sure stock cover all rice and don't move.  add in saffron
do NOT stir the rice, add in capsicums
and seafood to cook
clams and mussels are pre cooked, so put last
cook for 20 min in low fire and then cover with foil and rest for another 20 min before serving 



 Paella Mamagria mixta , 正宗 Valencia 的 paella 祗用海鲜,但其他地方有加雞,有些是雞和兔肉,我就煮了两款,海鲜的和海鲜加🐔,结論是加肉的好味,大满足
