Mommy Dearest 廚房 -- 海南雞飯

1. boil water, put in chicken
2. boil for 5 minutes and take the chicken out and hang up for a few min
3.  in the pot of water, put in ginger, salt, put back the chicken when it is boiling
4.  cook the chicken for another 20 min in medium fire
5.  turn off the fire and let it soak for another 20 min till cooked
6.  take out and put in iced water till cooled
7.  take out hang dry
8.  put some dark soy sauce and sesame on the chicken
1. wash rice and fry with garlic, ginger till fragrant
2. add in chicken stock and stir
3. take out and steam in steamer with pandan leaves for 20 minutes till fully cooked

    1. Yes, actually that's why the chicken looks shiny n tastes nice when served. it took me awhile to figure out what the stallholders did, hahahaa
