oh oh, if you find the jam not thick enough and you don't want to cook longer, try to put in fridge with lid OPEN, and see if that will evaporate out some moisture? it might help some, better than you throw it away. (and taste test before you bake so don't waste it. You do need sugar, it works as natural preservatives as well as pineapples are sour based in first place.
