Mommy Dearest 廚房 -- 免炸炸雞

crispy chicken served with triple sauces, sriracha mayo, avocado dip, or Thai mayo

do NOT put any salt on the chicken at all 

coat thoroughly 
put the chicken on rack and refrigerate for 2 hours to dry out the chicken 
after taken out, put oil on top of chicken pieces, bake at 225 degrees for 30 min 
after browned, turn over and oil the bottom side and bake for another 20 min till crispy too.

我都係第一次試咋,真係放啲baking powder (1tsp) 入去麵粉(1 cup)內,之後放啲coated雞入雪櫃兩個小時,然後放油在雞塊上面烤30min,turn over and put oil on the other side and bake for another 20 min, 咁啲皮真係好crispy㗎,神奇。
