海南雞飯晚餐 - 加食譜

海南雞飯差不多每兩個星期都會出現在我餐檯上,我家人太鍾意食啦,我呢就鍾意它方便一碟走天涯。
 
 
Hainanese Chicken rice
海南雞飯

To cook rice
1. fry chicken fat w ginger, garlic ,pandan leaf, lemongrass ,
2. add chicken stock and boil ,
3. add in washed rice, stir till water all absorbed, cover n cook in rice cooker, fluff.

*4 cup rice , use 5-6 cups (9 soup ladles) chicken stock

To cook Chicken
1. put in boiling water w ginger, lemon grass, a bit of salt , dunk in boiling water 3 times
0. Boil , then cook chicken for 25 min in MEDIUM fire if big chicken (1.3kg) , turn off fire n leave in stock for 25 min till done (total cooking time depends on size of your chicken )
3. Take out n put in iced water for 5 min
4. Take out, drain n put on plate
5. Rub some sesame oil n soy sauce on the chicken n let it rest
6. Cut up chicken n put sauce over before serving
7. Sauce: stir together 1/2 cup chicken soup, oyster sauce , Sugar
8. Serve w chilli sauce

Chilli sauce
Grind chilli, garlic and ginger together, add salt n taste. Add bit of lemon juice before serving if you prefer sour chilli sauce
