紅燒牛肉麵

    1. There are many ways of cooking this but I like this way because I think it's the easiest n tastes ok. I dont have a proper recipe but I write out the instructions and I think you can use that as a guide as to how much beef etc.

      1. 2 beef shin, soak in water for one hour, boil in water for 10 min and take out.
      2. in a pot, put in 2 tbsp of oil and about 2 tbsp of rock sugar . fry till the rock sugar all melted and turns brown (caramel color).
      3. add in the beef shin and brown the outside of the shin.
      4. add in 2 star anise, 1 tbsp peppercorn, half teaspoon of clove, 1 cinnamon stick, 5 bay leaves, 10 dried chilli (for fragrance). Fry till fragrant.
      5. If it is getting dry, add some chinese wine, till everything is fragrant.
      6. add in hot water till cover the beef shins.
      7. add in soy sauce and dark sauce
      8. cook in medium fire for 1 hour till the meat is to the texture you prefer (it doesn't take that long for shin to become soft)
      9. add about 1 tbsp of salt and taste test, to your preference.
      10. take out the shin to cool and slice to serve

    2. For the soup

      1. can use either chicken broth or pork bone broth or beef bone broth (depending on your preference)
      2. put in a ladle of the braise sauce from making the beef shin and adjust taste with sesame oil n pepper
      3. boil some noodles of your choice, and put in a bowl
      4. top with sliced beef shin, green veg of your choice
      5. pour soup over the noodles and garnish with spring onion and pepper.
