Mommy Dearest 廚房 -- 醉雞

 
excellent appetiser


roll up the seasoned thigh meat with strings

steam for 20 min 
 
ice bath for 10 min after cooked
 
cook the brine for 20 min n cool 
add in meat juice from steamed chicken and wine 
adjust taste with salt  
soak in prepared brine for 2 days
serve chilled
