泰国甜品 Khao Neaw Mamuang
每次去吃泰国餐,孩子们一定会点这个甜品,用榴梿和糯米做的。糯米甜的,有椰子香味,榴梿也很好味。 看见他们真的喜爱到非吃不可,就让我尝试学做吧!
Did not have time to look for recipe to find out how to make this Sticky Rice with Durian dessert, just rely on my taste bud and use what I THOUGHT should be inside to replicate it.
After taste test: very similar to what the restaurant served, only I cut down on the syrup part, less sweet... VERDICT by my kids: YUMMY, yeah....
如果不喜欢吃榴梿,可以用芒果取代,我比较喜欢泰国芒果,但现在不多,所以用泰国芒果取代。
Another version of this Sticky Rice dessert is mango, I used Taiwan Honey Mango here because Thai mangoes are not in season at the moment.Personally I prefer Thai mangoes because the taste is more intense and sweet. I put some coconut milk on top of the mango and only used a bit of syrup to cut down on the sweetness.
Khao Neaw Mamuang (simplified)
Ingredients:
250g glutinous rice, soaked overnight
1 tin coconut milk
100g brown sugar or gula melaka if you have it
3 mango, diced
Method:
1. Soak glutinous rice overnight, drain dry before steaming.
2. Steam for 15 minutes, stir, steam for another 10 min (if you find it too dry, sprinkle on some water)
3. In a pan, melt brown sugar with coconut milk; adjust the sweetness of syrup, u might need more or less acc to your pref.
4. Take out glutinous rice, stir in sweetened coconut syrup and adjust taste.
5. Keep warm
6. Before serving, put on chilled mangoes on top of rice, drizzle some coconut milk on top.
***The glutinous rice should be soaking in syrup, but due to calories, I didn't dare put so much sugar in , so it is up to you. The texture of the rice should be CHEWY, not soggy or mushy.
*** For the durian version, it is the same, except you can cream the durian flesh with some cream and sugar so it will be smooth. I did not do that as I like the original durian taste.

For the coconut milk on top, you need to boil the coconut milk and add sugar and salt.
