Oven baked salmon serves 8 • 4 tablespoons olive oil • 3 teaspoons salt, divided • 1 teaspoon cracked black pepper, divided • 8 (170 g) skinless salmon fillets • 5 tablespoons minced garlic,divided • 4 tablespoons fresh chopped parsley • 2/3 cup freshly squeezed lemon juice • 1 cup melted unsalted butter • 2 tablespoons dry white wine (substitute with 1/4 cup low-sodium chicken broth) 1. Preheat the oven to 200˚C. 2. Cover a sheet pan with foil or parchment paper. 3. Rub salmon evenly with 3 tablespoons of the minced garlic and 4 tablespoons of parsley. 4. Combine 1/2 cup of lemon juice and 1/2 cup of the melted butter together and pour the mixture over the salmon. Season everything with the remaining salt and pepper. 5. Bake for 8-10 minutes. (The salmon should flake easily with a fork when it’s ready.) Grill in the last 2 minutes of cook time to get those crispy, golden charred edges. 6. Meanwhile, in a small bowl, combine the remaining butter, garlic and lemon juice with the wine (or chicken stock). Serve with the salmon
