medium rare wagyu roast  , yumm
look at those marbles
must be at least 1.5 inches thick, dry in fridge overnight
season with salt and pepper before roasting
straight out from fridge to oven
90 degrees Celsius for one hour, 110 degrees Celsius for 1 hour, till internal heat reaches 125 F for medium rare 
check with meat thermometer every 15 min or less 
take out and sear in high heat
butter flavored with garlic and rosemary 
very fragrant 
medium rare rare 
melt in the mouth
